Sugar, coffee, cupcakes, and meal plan

We are completely out of sugar.  Completely out.  All gone.  We have honey, brown sugar, and confectioner's sugar, but none of those seem quite right to put in coffee.  And while pregnant, I need to have a bit of sugar in my coffee--the sugar cuts through the acidity and lets my stomach accept it.

We do, however, have sweetened whipped cream. Therefore, I am thoroughly enjoying my coffee today.

Last night we were at my parents' house to do our family birthday celebration (3 out of 5 of us have birthdays within a three-day spread in February).  It was fun, and I made the most amazingly delicious cupcakes ever.  If the camera battery were not completely dead, I would put a picture up.  But here is the recipe for Black Bottom Cupcakes from the Joy of Cooking. 

We didn't get in the car to go home until a little after ten PM, and within minutes Lizzie was out cold.  She slept while I got her out of the seat, woke up for a few seconds when I told her I would get her baby and her blanket (to which she said, "Please"), and didn't make a peep when I put her in the crib and removed her shoes.  Let me tell you, that has not happened in ... I would venture to say a year.  She slept all night long.    We had a full day yesterday, and she had no nap. 

My menu planning concept has been lost recently.  Sam working afternoon/closing shift more days than not has confused me when it comes to dinners.  It seems futile to make an entire meal for myself and a somewhat particular toddler.  Yet, having fewer real dinners makes for considerably fewer leftovers for him to eat for lunch before leaving for work.

So, this is the plan:
Real dinners:
- Baked Ziti
- Steak w/ marinated onions
- Pork chops w/ cabbage
- hamburgers/sliders
- something out of the freezer
- drive thru/out

Lunches:
- leftovers
- sandwiches (with some homemade bread?)
- quesadillas (I've been craving refried bean and cheese quesadillas almost daily lately!)

Breakfasts:
- waffles
- egg/sausage or Canadian bacon/cheese bagel sandwiches
- eggs, cereal, oatmeal... the usual.

Menu Planning and Morning Sickness

Now that I've given my big reveal, it won't be so hard to keep up a more regular blogging routine.  Something about not being able to talk about the biggest thing going on in my life paralyzed me from writing.  I'm also convinced that my lack of rest contributed to my lack of quiet times which in turn contributed to my lack of a sense of purpose in writing, which therefore contributed to my lack of writing.  Besides all that, I felt like crap.

Well, good that we got that out of the way.  I have to laugh because I am talking about menu planning.  I have told myself for the last 2 years that "the next time I get pregnant I'll quickly cook up a bunch of chicken and prepare a lot of freezer meal kits, before the morning sickness hits."  I thought that was a really good idea.  And it was, until reality hit and my first identifiable symptom about 2 weeks into the pregnancy was violent nausea.

Honestly, it's a wonder that we haven't all starved, the way I've had trouble even going into the kitchen some days.  There is nothing worse than dry heaving while trying make something to feed your hungry, confused toddler.  Who would have known that chicken nuggets would be so offensive?  Or rice and beans.  Or spaghetti (honestly, the thought of spaghetti makes me gag.  Just gagged.).  Or a hot dog.  Or oatmeal.  Or an egg.  Poor Sam has had to fend for himself more often than not.  

Suffice it to say, we have not had a menu plan in our house for about 10 weeks.  We have been living on the nutritious meals provided by Marie Callendar and dear Mrs. Stouffer.  I have had more Super Sonic Breakfast Burritos (light on the jalapenos and onions, heavier on the tots) in the last 2 months than in the previous 10 months.  Our deep freezer (a "happy pregnancy/we just (finally) got our tax return" gift from Sam) is full of convenience foods.  I will seriously have to take a picture.  And we've qualified for a GA-funded EBT card, so we're loading it up right now, with as much as can fit in there.  The thing is nearly 14 cubic feet.  That's a lot of veggies and Michellina's, y'all.

I will, however, try to get to the grocery store tomorrow, to pick up some necessities - orange juice, Raisin Bran Crunch (seriously, have you tried it?  That stuff's good!), saltines, Gatorade, chocolate chips, and some variety of red meat.  And some vegetables, since those are good for you. 

Tuesday I will host the 3rd Annual Great Cookie Bake, however, this time without the baking part.  It'll just be the cookie exchange part.  And that's really what everyone comes for anyway.  I've narrowed down my options for contributions to either Saltine Heath Toffee Bars, or Classic Sugar Cookies.  One is super easy, the other is super cute, and can be super fun.  Which would you pick?

Meals and Brunch Menu

A little late, but that's fine.


Monday, you may have read, was a little crazy.  I made Chicken Cacciatore, and it was delicious.


Tuesday, we were planning to have dinner with our home group, but Lizzie is still not a happy camper, so I have to make dinner.  I didn't end up making Baked Potato Soup last week, so that is what I will make tonight.


I am hoping to make it to the grocery store this afternoon or tomorrow, where I'll pick up what I need to make:

Steak & Salad

Crock Pot Beef Stew w/ Root Vegetables

Honey Dijon Chicken w/ rice

Stir-fried chicken (probably like this Sweet & Sour Chicken recipe) you guessed it, w/ rice

Eggs/Tofu/Tomatoes w/ rice

and the stuff for chicken soup - since it's always good to have it on hand.


Saturday we will have brunch, when I will make:

Pumpkin Waffles

Sausage & Onion Frittata

Hummus & Veggies & Crackers

Grape Salad

and coffee, juice, and whatever else strikes my fancy.

The beauty of all these things is that they can be made ahead of time and finished or warmed up in the morning!

Another Monday, Another Plan

Last week started with a handful of good intentions, but they got away from me, and, well, yeah.

It was not a bad week, it was just not one that felt very much under control. As though I have ever wrestled my weeks into submission.

I want to go to bed at a reasonable hour, so I can get up and have my quiet time before the quiet dissipates.

I want to exercise at least twice this week. Baby steps.

I want to prepare meals in advance so dinner is a pleasant time, instead of stressful.

Black beans are soaking, for Black Bean Soup from the Joy of Cooking. My mom had a ham hock that she threw in the freezer, then offered to me. I said I'd figure out something to do with it. Now it's been in my freezer for a week. Someone has to put it out of its misery.

A couple days ago I told my neighbor, who just had surgery for her broken arm, that I would bring her and her husband a meal this week. I have a feeling it will probably be the soup (if it comes out well enough to share), or maybe chili. Because who doesn't love chili?


The plan is as follows:

Black Bean Soup, Jiffy corn muffins
Spaghetti and veggies
Red Cabbage and Kielbasa
Chili, rice
Chicken Cacciatore, pasta
Baked Potato Soup, grilled cheese
And leftovers galore!

I also bought 2 pie pumpkins at Walmart yesterday, with plans to gut them, cook them, and make something delicious, then freeze what's left. I made some fabulous waffles (page 6, "fruity waffles") last week using freezer burnt pureed butternut squash baby food. You never would have known it was not pumpkin. I have grand plans to make pumpkin waffles throughout the winter, and a pumpkin spice latte knock-off a time or two!

Monday. Meals and Such, Oct 4


Well, the Menu Plan Monday thing is tricky for me. I have posted our meals on the blog 3 times, and never have stuck precisely with the plan. So, I'm going to go with "Meal Options" instead.

Apparently I'm more of a free spirit than I let on, and don't like following a list. Or maybe I'm such a poor planner that I don't plan according to logic, or refrigerator space. But I suppose I'll figure it out before too long. For now, I do well with a list of "what we can eat this week" and I'll start whichever one on whichever day, and if not, we'll eat grilled cheese.

Meal options, 10.4.10

Honey Dijon Chicken w/ pasta and veggies (what we ate tonight; a hit with all of us, every time)
Country Style Pork Ribs (Help? They were on sale. Any suggestions for me as to how to make them?)
Sausage and Peppers and Onions (this is SO good)
Beans & Rice
Cube Steak and veggies and potatoes
Grilled cheese & soup (from a can)
Arroz con Pollo
and probably some chicken sandwiches (you know, frozen chicken patties, on buns. Yes, because we're classy like that.)

For breakfasts: oatmeal, eggs, and once or twice pancakes or waffles

Lunches: leftovers, sandwiches, whatever we can find in the pantry

Last week I did make a couple of good meals, and one of them I want to share with y'all. It's a pretty simple gumbo, and I got pictures and everything. Fun. So hopefully that will go up this week.

menu plan 9.27.10

I'm giving this menu plan thing a try.

Actually, I plan my meals every week, sometimes more than a week in advance. But this time I am linking up on the world wide web, so now if anyone is interested in seeing what we're eating, well, here is your chance.

Monday (today) - spaghetti.

Tuesday - pot pie with the leftover veggies, broth, and chicken that I roasted on Saturday.

Wednesday - beef roast, either in the crock pot, or in a beef burgundy sort of way. Not sure yet. I guess I should figure that out before I go to the store, shouldn't I?

Thursday - chicken divan

Friday - shrimp & sausage gumbo (I have frozen shrimp, and frozen gumbo veggies. I imagine this shouldn't be too hard to pull off)

Saturday - pork chops, and/or leftovers

Sunday - BLTs and/or leftovers

Lunches - leftovers, mac & cheese, sandwiches, whatever-we-can-find-in-the-fridge-that's-edible

Breakfasts - eggs, pancakes (blueberry!), oatmeal

I don't have any links for my recipes, but one day I will.

I have a few WIC coupons for milk that I need to use this trip, so we will have a LOT of milk all at once. I'm new to the whole WIC thing, so I forgot them when I went to the stores, and now I have to buy 3 gallons of milk at once. I'm thinking about making a lot of pudding, and maybe even yogurt. But I will definitely freeze some of it.

If you have ever frozen milk, do you do anything special so it doesn't explode when it expands?

Update on Liz, Life, and My Heart

Lizzie update, 13 months:

Lizzie has fallen in love. With the motorcycle. Every time she thinks of it, hears the word, sees a picture of one, or sees us go into the garage, she growls and points to the garage, and then signs "more" because she wants us to take her to look at it again. Yesterday morning Sam was on the computer at the table while we were eating breakfast. He followed a link to a video where there was a motorcycle, and all of a sudden we had to watch "more" motorcycles, or there was going to be a heartbroken toddler in her high chair.

Yesterday, Lizzie learned to say the word "apple." It surprised me entirely, because I haven't tried to teach it to her. I was giving her some apple juice, and the next thing I know, she was saying what sounded like "abba" or "abbo." So then of course I gave her an apple, and we read a book that had an apple on the cover, and we showed off this skill over and over again. It's not a fluke - she says it consistently now.

This brings her word count up to 5, plus growls and grunts.
Mama, oon (balloon), k'k (kick), Dada, moo (cow; except it's more like raspberries followed by 'oo'), and various sounds for things that make noises: "who who" for sirens or a train, also for owls, "ow" for meow, "broo" for the elephant trumpet, and "hrrr" for dogs barking, vehicles rumbling, lions, bears, or anything that growls.
She signs "more" and "all done" and "change" (when I ask her if we need to change her diaper), round and round (fan, wheels, anything that turns or spins), and up. And of course, she points and gestures and whines. Nods "yes" with her whole body when we ask her something that she wants.
She also blows kisses, runs, twirls in circles, sways when she hears music, claps, and laughs (almost) on command. She puts her hands up when we say "Praise the Lord!" She can find and retrieve things if I ask her to (e.g., Go bring me your drink; it's by the piano.). She throws tantrums when she is very tired and can't communicate what she wants or just doesn't like what's happening at the moment.
Her 9th tooth popped through yesterday. Yesterday was apparently a really big day. Last night was the first night in about a week that I put her to bed without Ibuprofen drops.

In all, Lizzie is a joy and a very smart little girl. Today we went to play group at the mall, where we watched The Veggie Tales Movie (about the Pirates Who Don't Do Anything) during their free showing, then played in the play area, and ate at the food court. It was a very eventful day, and even after being home for a little over an hour, Lizzie is still unwinding. I am hoping she will eventually fall asleep, since she's been in her bed, clapping and chattering to herself for about 45 minutes.

I would have some more recent photos here, to try to break up the huge blocks of text, but I have lost the camera's battery. I'm praying it turns up soon, and not chewed up by a teething toddler.

Life, etc.

After talking with a few friends a couple of weeks ago, I got turned on to more serious couponing. I have always tried to be as efficient as I can, and take advantage of what looks good, but haven't been that consistent. Steph and Amy referred me to SouthernSavers.com where I have been finding some fun deals. However, I did go to Kroger twice this week already, and spent $85 the first time and $60 the second time, and then went to H-mart and spent another $31. But I am reminding myself that this is for groceries for the next 2 weeks, and it included some things like diapers and paper towels--those add up. I shouldn't have to buy anything except for more milk and probably some more tortillas until almost August. I also did save about $50 in coupons and sales, so I think it's OK.

That being said, I have a whole menu plan for the next 2 weeks:
Monday: Rotisserie chicken, salad, bread
Tuesday: Chicken enchiladas, fruit
Wednesday: Steak salad, bread
Thursday: Hamburgers, cole slaw
Friday: Chicken Divan, bread
Saturday: Hot dogs, corn casserole
Sunday: Beans & rice & meat, fruit
Monday: Chicken sandwiches, veggies
Tuesday: Scalloped Potatoes w/ ham, veggies
Wednesday: Arroz con pollo, fruit
Thursday: Mahi mahi, veggies, pasta
Friday: Shepherds Pie, veggies
Saturday: Stir fry w/ tofu, meat, veggies
Sunday: Spaghetti, veggies

If I were really smart, I'd double and freeze some of these things for other times. But I'm not that smart. Maybe next time. We also have stuff for sandwiches, mac & cheese, and other odds and ends for lunches and breakfasts.

Sam is still looking for work. We have gotten a couple of leads from friends, and we're praying that something comes up. Something good. Something close. Something that gives us insurance. Something that gives Sam a sense of having a purposeful career.

If nothing comes up, I'll have to start looking for work, and Sam can be a stay at home dad.

The heart.

It hasn't been a super easy week. I've been exasperated, short-tempered, snappy, mean, overwhelmed, and generally miserable. This did not serve to make the house peaceful. I should probably just leave it at that, lest I complain. But don't worry, I'm better now.

For several days I had a terrible pattern of being awake way too late, and then in the morning being awakened by Lizzie's voice (sometimes cheerful, sometimes not so much). This meant that I "didn't have time" for a quiet time. That of course started those days with me in a bad mood, thinking about how behind I already was, and how I would never be able to make up for it. And I dug myself deeper into the pit of despair when instead of honestly asking for help, I whined to Sam about how unfair it was that I had to do "everything," and implied in every way possible that it was somehow all his fault that things weren't going my way. Interestingly, that is not the way to encourage someone else jump in cheerfully to lend a hand; rather, they're more likely to avoid you so as not to hear more venomous complaints. Trust me on this.

This is on the heels of reading through the entire book of "Practicing the Presence of God" by Brother Lawrence, and watching an awesome message from Beth Moore in our Believing God study on Sunday afternoon. In retrospect, it seems like the viciousness of the feelings I was having were a direct attack of the enemy--trying to steal any seeds of truth from actually penetrating my heart in a way that would wake me from my spiritual stupor. As the recently popular song says, "I don't want to be sleeping while the battle is raging."

Yesterday on my way to and from Kroger and the H-mart, I popped in the cd of the message from Sunday, about the way that God meets our needs when we ask, seek, and knock. He knows where we are, and wants us to need Him and wants us to ask when we need Him. Why do we have needs? So he can meet us in our needs. Why can I not do everything on my own? Because I need Him to be my strength and my wisdom.

This morning I was able to break out of the downward spiral by getting up (even after we didn't go to bed until after midnight) and having my quiet time. I got up before 7, which never happens. And I made breakfast, voluntarily, for all 3 of us, and was cheerful. And Lizzie and I went out, and I sang along with the radio. And I didn't complain to my friends about how awful my lot is right now. Because it is not awful. It is just part of my process.

I am not who I've been convincing myself that I am. I am who God says I am. 2nd Corinthians 3 says that I am "competent" as a "minister" by the Spirit, not the letter of the law. For the letter kills, but the Spirit gives life. Based on the meaning of those words, I am also "sufficiently equipped" to be a "waiter, serving food and drink" by the Spirit of God. I don't know what that might do for anyone else, but I think that just changed my whole perspective as of today. Most days I feel like that's all I am: a waiter, serving food and drink, constantly. And I don't even get tips. But if I am able to do so with the help of the Holy Spirit, then I have the opportunity to serve in faith, and produce life.

I want to have the perspective that goes beyond just the next 15 minutes, and into the next 15 years. Lord willing, into the next 15 generations. Simply doing something because it has to be done has no element of faith nor any enduring value. But doing it in faith, in love, in expectant hope, as unto God, it has the potential to affect more than just the here and now.

Menu Plan Feb 8

Here's what I'm planning to make for dinners this week:

Monday: Spaghetti w/ meat sauce, veggies, bread

Tuesday: Chicken Cacciatore, pasta

Wednesday: Beef Stew w/ potatoes, carrots & onions, and TX Toast

Thursday: BLT's & Soup or leftover Stew

Friday: Salmon, Quinoa, and Fruit Salad

Saturday lunch: Rice & Beans / Saturday dinner: out! :)

Sunday: Bean & Cheese nachos and/or leftovers
